I had mine restored years ago too. 1911 vintage, and still shoots well.
Although, I now use a Colt 1911 repro for all the range work. This old horse gets safe time now....I'ts earned a rest...

Here is my 2 1911 Colts manufactured in 1918. The top one has just come out of the shop where it was restored. Both are "US PROPERTY" marked. Bottom has not been touched by me. They are unfired by me.

i don't see why you can't shoot and enjoy your restored 1911s, can't hurt them with factory loads. no original finish to worry about, fire away.
