Can someone tell me if the trigger guard and back strap on these guns are brass with a nickel plating on them?

They are silver-plated brass, except for the Model C1122, where they are bare brass.

Thanks, I wasn't sure if they were nickel or silver plated. I assume that the original 1800's models that I see were done the same way and the silver plating has just all worn off?

Yes.
A lot of Colt's had silver plated back straps.
Silver plating is not very durable, and tarnishes and wears off easily.
