Although mechanically my '53 Official Police I picked up is excellent, and is a great shooter, the bluing is pretty well gone. I was thinking about re-bluing it. What is the best way to do this? I'm not really too worried about the value of the gun, as the OP's seem to be pretty common, and if anything, I would think making it look better could only help. Any input?

Stay away from any and all of the cold blue solutions. It will put a finish on it and help prevent rust, but cold blue looks like crap.
Check and see if any of your local gunsmiths do quality hot blue. If not you can always send it back to Colt to be refinished.
I`ve heard that Colt is fairly reasonable for price on refinishing and do an excellent job, but when you figure in the shipping costs, a local smith could probably give you a better price.
Now the quality of the job a local smith might do is an entirely different question.
Most of the ones that do good work will have an example or two around that they can show you.
