I have 2 U.B. Stainless 1911's. One's a series '80 in .45, and the other's a series '80 enhanced .38 super. The .38 super has a couple hair line (or thinner) 1/4" scratches (not deep). Anybody ever had any luck polishing U.B.?

Will your finger nail catch on the scratch?

Re-polishing UB is no big problem as long as the defect is not too deep. Remember Colt even has a service to take a stainless to a bright stainless (UB) so it's simply a matter of polishing.

To answer your question, yes I have had success taking out (blending) minor scratches from bright stainless.
